Pulled Pork Stuffed Idaho Potatoes

In this cook, we take smoked pulled pork and stuff it in, baked on the grill Idaho Potatoes

  • webber kettle grill

Ingredients
  

  • 4 whole Idaho Potatoes
  • 1 lbs Smoked Pulled Pork
  • 2 cups Shredded Cheddar Cheese
  • 1 cup BBQ Sauce
  • 2 tbsp Olive Oil
  • 2 tbsp Salt of your choice (we like pink himalayan)
  • 2 tbsp Chupacabra bbq rub (or your choice)

Instructions
 

  • Wash/rinse potatoes in water
  • Poke holes in potatoes with fork, liberally
  • Rub with olive oil and cover with salt
  • Place on grill, just off the fire and cook for around an hour. Internal temp should reach 210 degrees
  • Place potatoes in pan and carefully cut open. (caution they are hot!)
  • Dig out some of the inside with a spoon and place in the pork
  • Sprinkle some rub on and drizzle with bbq sauce
  • Add plenty of cheese on top, then place back on the grill until the cheese melts
