Pulled Pork Stuffed Idaho Potatoes
In this cook, we take smoked pulled pork and stuff it in, baked on the grill Idaho Potatoes

- 4 whole Idaho Potatoes
- 1 lbs Smoked Pulled Pork
- 2 cups Shredded Cheddar Cheese
- 1 cup BBQ Sauce
- 2 tbsp Olive Oil
- 2 tbsp Salt of your choice (we like pink himalayan)
- 2 tbsp Chupacabra bbq rub (or your choice)
Wash/rinse potatoes in water
Poke holes in potatoes with fork, liberally
Rub with olive oil and cover with salt
Place on grill, just off the fire and cook for around an hour. Internal temp should reach 210 degrees
Place potatoes in pan and carefully cut open. (caution they are hot!)
Dig out some of the inside with a spoon and place in the pork
Sprinkle some rub on and drizzle with bbq sauce
Add plenty of cheese on top, then place back on the grill until the cheese melts
